Pumpkin brownie with 'cheesecake' frosting

For the brownie:

Ingredients:

  • 300gr pumpkin puree (I baked pumpkin on 200C for 30 mins in the oven and simply mashed with fork)

  • 200gr cream cheese (take out the fridge 20 mins before for it to soften)

  • 50gr dark baking chocolate - chopped into pieces

  • 2 eggs

  • 3 tbs unsweetened cacao powder

  • 30gr oats blended into powder

  • 1 cup soda/sparkling water

  • 2 tbs powdered stevia

  • pinch of baking powder/bi-carb soda

  • pinch of salt

Method:

  • Whisk the eggs with stevia (I used a hand mixer)

  • Add pumpkin puree and cream cheese, mix thoroughly

  • Add cacao powder, oats, baking powder, salt, chopped chocolate and mix again

  • Add soda water and carefully stir until the even consistency is reached

  • Pour into the baking cake tin lined with parchment paper

  • Bake on 180C for about 40 minutes (until the middle is not shaky)

  • Chill in a fridge for about 5 hours

For ‘cheesecake’ frosting

Mix 200 gr softened cream cheese, 1 tbs powdered stevia, vanilla extract and serve with your brownie :)
