Layered brownie with vanilla custard

I’m not a huge fan of cooking something that takes longer than 10-15 minutes to whip up but baking is my jam! I love coming up with the healthier alternatives of my favourite treats and this refined sugar free brownie with custard was bomb and didn’t last more than 24 hours in this household :)

For the brownie:


  • 2 eggs

  • 3 tbs powdered stevia

  • 250gr smooth ricotta

  • 3 tbs cacao powder

  • 2 tbs rice flour

  • vanilla liquid

  • pinch of salt


  • With the band mixer whisk the eggs with stevia

  • Add ricotta and vanilla and mix again

  • add all the other ingredients, mix thoroughly

  • bake on 180C for about 40 minutes

In the meantime prepare your custard

Pour 500ml of milk in the pot, add 3 tbs rice flour, vanilla liquid and 2 tbs powdered stevia, mix well (I used the hand mixer again) and cook over medium heat constantly stirring until thick (if the consistency is not even just beat it with the hand mixer) and set aside.

When the brownie is done and cooled down cut it into 3 layers (or 2 depending on the height of your brownie), spread the custard over each layer and chill in a fridge ♥
