Power salad with homemade falafel

I swear I’ve been making this salad for 7 days in a row and it seriously changed my whole lunch game 😁

All Russians are obsessed with mayonnaise (well I certainly am) but it’s too heavy even when you make your own and my mum recently told me the recipe of a super simple yet suuuuch a delish dressing recipe that tastes even better than mayo and not as calorie dense!

Also falafel is a food group and I can never get enough of it so been also recently making it continuously and instead of frying it I just oven bake it and its BOMB 🖤

So without any other unnecessary words here is the recipe:

Power Salad

with the homemade falafel

For the SALAD you just need to finely chop one small beetroot, carrot, handful of white cabbage and kale, fresh dill (yuuum), 1/2 avocado (I just spoon it out with a teaspoon), 2 fresh figs (they’re in season now in Australia, sooo good), sprinkle with toasted pumpkin seeds

For the DRESSING: thoroughly mix 3 tbs greek yogurt, 1 tbs seeded dijon mustard, season with salt, black pepper and garlic

For the FALAFEL

  • in a blender blitz a can of drained chickpeas (or garbanzo beans are even better if you can find them) until the paste-like consistency is reached

  • transfer in a large mixing bowl and add 3 tbs rice flour and a pinch of baking soda

  • season with the following spices: ground cumin, coriander, paprika, chilli, onion, garlic and salt

  • add 1 tbs olive oil

  • mix properly and let it sit for 10 minutes

  • bake on 180C for about 15-20 minutes (store the leftovers in an airtight container)

I took a photo of the salad and dressing separately but usually I mix it altogether including the falafel (it’s not photogenic haha)
